A fusion sushi roll using rice paper and nori, filled with fresh sushi-grade salmon, vegetables, and imitation crab, complemented with a homemade spicy mayo dipping sauce.
1. Rinse the sushi rice under cold water 3–4 times until the water runs mostly clear. Add the rice and water to a rice cooker and cook according to package instructions.
2. While the rice cooks, mix together the rice vinegar, sugar, and salt until dissolved. Once the rice is done, gently fold the seasoning mixture into the warm rice and let it cool slightly.
3. Lay the nori sheet on a flat surface. Lightly dip the rice paper sheets in water until softened, then place them underneath or slightly overlapping the nori to create a sturdy wrap base.
4. Spread a layer of sushi rice onto the wrap. Add the lettuce first, then layer on the carrot, cucumber, imitation crab, salmon, tomato, onion, avocado, and cabbage. Drizzle with Thousand Island dressing or your favorite sauce.
5. Fold in the sides and bottom tightly, then roll everything up like a burrito, keeping the filling compact and secure.
6. Lightly brush the outside with sesame oil and sprinkle with toasted sesame seeds. Slice into bite-sized pieces.
7. In a small bowl, mix together the mayonnaise, sriracha, and fish roe to make the spicy mayo dipping sauce. Serve on the side and enjoy!
